Two pyramids, two philosophies: eggs and whole milk are back in the spotlight, yet the Mediterranean diet continues to set the course.

HOLA MUNDO..!!

By 2026, the global conversation on nutrition no longer spoke with a single voice. While the United States was rewriting its dietary guidelines using an inverted pyramid, Italy and the Mediterranean scientific community were updating their own. Two roadmaps for better eating—two nearly opposing visions of what that actually entails.

In January 2026, the United States unveiled its 2025–2030 Dietary Guidelines, featuring a significant visual and conceptual shift: an inverted pyramid that prioritizes proteins, dairy, fruits, vegetables, and healthy fats, while calling for a reduction in ultra-processed foods and added sugars.

Las novedades más comentadas son tres:

The most discussed changes are three:

More protein. The recommended range increases to between 1.2 and 1.6 grams per kilogram of body weight per day—nearly double the traditional 0.8 grams. This change has drawn both support and criticism in equal measure.
Eggs, now back in favor. They are listed among the recommended sources of protein, alongside fish, meat, poultry, legumes, nuts, and seeds.
Full-fat dairy, back on the table. The guidelines move away from the emphasis on skimmed products, instead recommending three daily servings of unsweetened, full-fat dairy.

The sample menu accompanying the guidelines sums it up well: two boiled eggs with cucumber for one meal, and oats cooked in whole milk for another.

The proposal was presented as the most significant overhaul of federal nutrition policy in decades, in a country facing a health emergency driven by obesity. It is also linked to the MAHA movement, which advocates for “real food” as opposed to industrial products.

There is one detail that speaks volumes: according to published comparative analyses, the Mediterranean diet is not mentioned in the USDA guidelines. In Spain, by contrast, it serves as the primary cultural and scientific benchmark for official recommendations.

Spanish media outlets also pointed out two notable omissions: legumes—a cornerstone of the Mediterranean dietary pattern—and the distinction that Mediterranean culture makes between different types of fats. In the “real food” discourse, olive oil—an unsaturated fat with well-documented heart-healthy benefits—is lumped into the same category as butter and other animal fats.

On the other side of the Atlantic, the Mediterranean diet has not remained static; rather, it has been updated.

A working group from the Italian Society of Human Nutrition (SINU) has introduced a new pyramid that places plant-based foods—fruits, vegetables, whole grains, legumes, and extra virgin olive oil—at its base. Red and processed meats are given less prominence, while dairy, white meat, and eggs are recommended for moderate, weekly consumption. The model also limits added sugar, salt, and alcohol, and introduces a new dimension: environmental, cultural, and economic sustainability.

Joan Salge Blake, a nutrition expert at Boston University, highlighted the most notable changes: cheese is now categorized as a protein source, dairy is recommended for daily consumption, and there is less emphasis on alcohol. However, the foundation remains unchanged: fruits, vegetables, whole grains, legumes, and fish. The pyramid also places greater focus on reducing food waste.

In February 2026, another proposal took things a step further. The Italian Society of Endocrinology (SIE) and the Italian Association of Dietetics and Clinical Nutrition (ADI) published a Mediterranean pyramid in *Current Nutrition Reports* based on «chronotype»—linking the quality of what we eat to the timing of our meals and our circadian rhythms. The diet is no longer understood merely as *what* to eat, but also as *when* to eat and *how* to live.

Furthermore, the diet continues to receive strong endorsement from experts: in January 2026, the Mediterranean diet once again topped the *U.S. News & World Report* ranking of the best diets, with the MIND diet—a variation designed for brain health—also placing in the top three.

Aquí conviene separar el titular del matiz.

Here, it is worth distinguishing the headline from the nuance.

A boiled egg is a complete, satiating, and versatile food; the 2026 guidelines—following years of suspicion—now vindicate it. It also has a place within the Mediterranean dietary framework: it isn’t excluded, but rather consumed in measured amounts. The key lies in the frequency of consumption and what it is paired with. A boiled egg served alongside a salad, legumes, and olive oil is one thing; a serving of animal protein without any plant-based component is quite another.

Whole milk is regaining legitimacy in U.S. food policy, even as the scientific debate regarding saturated fat and LDL cholesterol remains ongoing. In fact, there is a registered clinical trial underway to determine whether replacing low-fat dairy with whole-fat dairy—at a rate of three servings per day within a Mediterranean-style diet—maintains the observed benefits for cardiovascular markers. The study is funded by the dairy industry—a detail that any critical reader should be aware of.

The lesson here is not that “whole-fat won” or that “skimmed lost.” Rather, it is that modern nutrition is moving away from the logic of demonizing an isolated nutrient and shifting toward an approach that considers the overall dietary pattern.

A comparative analysis published by CNN, developed in consultation with a dietitian, illustrates this clearly. The Mediterranean diet limits dairy, poultry, and eggs to one serving per day, whereas the U.S. dietary model emphasizes full-fat dairy products. In the Mediterranean approach, fats come primarily from olive oil, avocado, and nuts; in the U.S. guidelines, they come from meat, butter, eggs, and full-fat dairy, alongside olives, avocados, and nuts.

In short: the U.S. approach places animal protein and dairy fat at the forefront, while the Mediterranean model maintains a plant-based foundation and keeps animal-derived foods to moderate amounts.

Despite the differences, there is common ground that matters:

  • Comer alimentos reales y menos ultraprocesados. Eat real foods and fewer ultra-processed foods.
  • Reducir azúcares añadidos y cereales refinados. Reduce added sugars and refined grains.
  • Incluir frutos secos, semillas, verduras y frutas. Include nuts, seeds, vegetables, and fruits.
  • Elegir agua antes que bebidas azucaradas. Choose water over sugary drinks.

In other words: neither of the two pyramids advocates for fast food. The real debate concerns what occupies the base, and how much protein and animal fat should be included above it.

  1. Construye desde la base vegetal. Verduras, frutas, legumbres, cereales integrales y aceite de oliva virgen extra. Build your diet on a plant-based foundation: vegetables, fruits, legumes, whole grains, and extra virgin olive oil.
Include eggs—don’t be afraid of them, but don’t overdo it. Enjoy them boiled or pan-seared, accompanied by vegetables.
Treat dairy products as a supplement, not a cornerstone. Consume yogurt, cheese, or milk in moderate portions.
Focus on the overall dietary pattern rather than any single «star» food. It is the combination of foods, maintained over time, that protects your health.
  5. Personaliza. Personalize your approach. The needs of an athlete differ from those of someone with diabetes or high cholesterol; the best course of action is to consult with a nutrition professional.

The year 2026 will be remembered as the year when two different dietary blueprints clashed. One promised simplicity, advocating a return to protein and full-fat dairy. The other served as a reminder that longevity is built upon foundational elements: plants, olive oil, legumes, fish, and a measured, unhurried approach to eating.

Boiled eggs and whole milk are neither enemies nor saviors; they are merely components. And, as with any pyramid, what truly determines one’s health is what is placed at the base.
